An Interview with Nemacolin’s Private Chef
We connected with Chef John Chiusano, Nemacolin’s private chef, to ask him a few questions about his experience caring for resort guests, and here’s what he had to say.
What’s your favorite part about providing private chef experiences to guests or members?
Chef John: One of my favorite parts is the experience and the camaraderie at the event. I like to see the guest’s expression and overall satisfaction. Even though I’m involved with their event and with the ingredients and preparation, the host is the one who has planned the menu and helped to execute a successful dinner party. It’s a collaborative effort between us, and it is truly rewarding to see how pleased they are with the experience.
Tell us about some of the recent dishes or entrees you’ve prepared.
Chef John: There are so many. We were recently involved in a high-profile engagement and the proposal was filmed for the memories and for YouTube. We’ve done a delicious charcuterie board with honeycomb, creamed honey, and so many local meats and cheeses; Beef Wellington for a family that requested this traditional classic; a white navy bean soup with pancetta crisps — we can prepare whatever a host wishes to serve for their special evening or event.
How has being a private chef elevated your own cooking beyond your time as a restaurant chef at Nemacolin?
Chef John: I enjoyed my time as a chef de cuisine at Nemacolin, and I brought my expertise to the team in the kitchen. I can now use my expertise and devote it to the detail that goes into each and every event. As a private chef, I can be very specific with my ingredients and detailed plating.
If someone is interested in talking with you about your services and a menu, how can they do so?
Chef John: Once they have their home or estate reserved, they’ll let their reservations agent know of their interest in having the services of a private chef. At that point, a representative from the conference services and catering department will reach out to them to share the menu samples I’ve created for a family gathering, social event, or a romantic night in. We’ll listen to their ideas on tableware, what meals they are interested in having me prepare, and how many people will be joining them. In every case, I’ll talk with the host to plan the menu, incorporating the details they want to have included. I can be as much a part of their event as they wish, giving tips or a bit of instruction throughout the event, or I can be completely in the background as they host their group.
